Panagyurishte eggs

This is a very basic Bulgarian breakfast recipe. It reminds me of weekend breakfasts with the whole family. Bulgarians are very proud of their yogurt, and here yogurt has the leading role!

Ingredients

One egg (poached)
Greek yogurt (1 cup)
Olive oil (2 table spoons)
Red pepper flakes (1 teaspoon)
Garlic (1 or 2 cloves)
Salt to taste
Fresh dill
Crusty bread

Instructions

Mix yogurt with crushed garlic cloves and salt to taste. Heat up the oil and mix the red pepper flakes, set aside. Spoon the yogurt in a bowl, place the poached egg and top with the red pepper oil mixture. Top with fresh dill and eat with crusty bread.
