Egg Bites

When prepared ahead, it is a healthy, quick breakfast for lives that are "on the go"!


Eggs, beaten
1/2 cup red bell peppers, diced into small pieces
1/4 cup spinach, chopped
1/4 cup kale, chopped
1/2 tsp garlic powder
pinch of salt
pinch of pepper
*optional – swiss/gouda cheese


Preheat oven to 400 degrees

Place peppers, kale and spinach into greased (12) muffin pan
Blend the rest of the ingredients for 30 seconds
Pour into muffin pan

Bake for 16-18 minutes until egg is cooked through.
