Toasted Almond & Cranberry Granola

3 cups rolled oats
1 cup raw almonds, roughly chopped
3/4 cup dried cranberries
3/4 cup unsweetened shredded coconut
1/2 cup raw sunflower seeds
1/2 cup raw pumpkin seeds
1/2 cup chia seeds
1/4 cup maple syrup
1/4 cup honey
1/4 cup vegetable oil
1/4 tsp salt


1) Preheat the oven to 250 degrees Fahrenheit (120 Celsius).
2) In a large bowl, mix the oats, almonds, coconuts and seeds.
3) In a small bowl, mix the maple syrup, honey, vegetable oil and salt.
4) Pour the liquid mixture over the ingredients in the large bowl and stir to combine.
5) Spread the granola evenly over a baking tray and place on the centre rack in the oven.
6) Bake the granola for 60-70 minutes, stirring every 15-20 minutes to get an even colour.
7) After baking, remove and let cool completely. The granola will continue to harden and develop a crunch.
8) Store granola in an airtight container.
