I love this recipe because it has so many nuts and seeds along with Oats. It is hearty cookie that is guilt free and has great nutritional value.
11/4 cups rolled oats
1/4 cup regular flour OR almond flour
1/2 cup raw sunflower seeds
1/4 cup pumpkin seeds
1/4 sliced almonds
1/4 sesame seeds
3 tablespoons chia
1/4 cup dried cranberries
Dark chocolate chips (as many as you want)
1 tablespoon cinnamon
1/4 tsp salt
1/2 cup maple syrup
1/3 cup almond butter
1/2 tsp vanilla
1 egg
Michelle's modifications (additions) are to add 1/2 cup chopped walnuts and 1/2 cup raw cashews, 1/4 cup flax seed, 1/4 cup chia seed.
Just mix everything together in a medium to large mixing bowl. My secret is to heat up the almond butter for a short time to warm it up just a little bit so it mixes easier. This recipe is very forgiving so add whatever you like. It always works!
Use a heaping tablespoon.
Bake at 350 degrees for 12-14 minutes
You should end up with 2 dozen cookies.
I freeze these cookies and always make a double batch.
